Rinse beans well.
Cover each cup of beans with 3 cups of water and let stand for 12 hours.
Cover and slowly cook on medium heat until beans are tender, about 2 hours.
Add more water if necessary.
Season to taste.

Add 1 cup rinsed beans to 3 cups boiling water.
Boil 2 minutes and let stand for one hour.
Cover and slowly cook on medium heat until beans are tender, about 2 hours.
Add more water if necessary and season to taste.
