This one-gallon cherry water ice flavor base is formulated to produce authentic, smooth, and scoopable Italian-style water ice. It is easy to use in batch freezers and ideal for hand-scooped or Philadelphia-style ices.

Key Uses & Preparation

Yields: Each gallon yields approximately forty-eight 12-ounce prepared servings.
Typical batch: Mix 1 gallon neutral sorbet base, 1 gallon flavor base, and 2.5 gallons water in a batch freezer to yield about 20 quarts of Italian ice.
To enhance flavor and preserve freshness, add 1–2 ounces of citric acid to the mix before freezing.
Shake the flavor base well before use to ensure contents are fully blended.

Storage & Handling
