Yields: Each gallon yields approximately forty-eight 12-ounce prepared servings.
Typical batch: Mix 1 gallon neutral sorbet base, 1 gallon flavor base, and 2.5 gallons water in a batch freezer to yield about 20 quarts of Italian ice.
To enhance flavor and preserve freshness, add 1–2 ounces of citric acid to the mix before freezing.
